Where is my data processed?

Settings → Privacy names the country under "Processed in".

The Privacy screen states where processing happens, as “Processed in: …”. It is shown rather than buried in a policy because for many people it is the first thing they want to know.

Why it is on the screen rather than only in the policy

For many people it is the first question, not a footnote — so it is stated plainly as “Processed in: …” on Settings → Privacy, alongside what is held and who else sees it.
